Ugnspannkaka med shiitake

Ingredients:

  • 3 dl vetemjöl
  • 6 dl mjölk
  • salt
  • 5 ägg
  • 400 g shiitake svamp
     
  • 2 msk rapsolja
  • 2 msk smör
  • 90 g grönkål
  • 1 gurka
  • 65 g spenat

dressing

  • 3 msk olivolja
  • 1 msk vinäger
  • 2 tsk dijonsenap
  • salt
  • peppar

Till servering

  • smör, smält
  • lingonsylt

Gör så här:

  1. Sätt ugnen på 200 grader.
  2. Vispa ihop ägg, mjölk och mjöl till en jämn smet. Smaka av med salt. Låt stå medan resten förbereds.
     
  3. Dela svampen i skivor och stek den gyllene i rapsolja för att få ut umami smaken.  Salta och peppra.
  4. Smörj en ugnssäker form med smör. Tillsätt shiitake svamp. Häll på smeten och grädda i ugnen i ca 30-35 minuter.
  5. Vispa ihop ingredienserna till dressingen.
  6. Skär gurkan i trevliga bitar. Riv bladen från grönkålsstjälkarna. Hacka bladen grovt. Blanda lite av dressingen med grönkålen, massera gärna med händerna lite så att grönkålen mjuknar. Vänd ner bladspenaten och gurkan. Häll på resten av dressingen.
  7. Servera ugnspannkakan med lingonsylt och salladen!
